Planting density: 5,000 vines per hectare
Production area: Brindisi, Salento, Puglia. At about 100 m above sea level

Soil: Shallow, medium textured, mostly sandy
Harvest: Last week of August
Vinification: The destemmed grapes are kept in contact with the
peels for a few hours in the cold before pressing, so as to extract the
maximum aromatic potential from the skins. Fermentation takes place in
steel at 15°C for 13-15 days, preserving the bouquet and profile intact
natural aromatic of the grapes
Aging: In steel for 5 months
Organoleptic characteristics: Straw yellow colour; delicate aroma
of white flowers that blends with citrus notes and Mediterranean scrub
frog. In the mouth the hints of thyme and rosemary confirm a sensation
of elegance, freshness and persistent minerality
Pairings: Fish-based first courses and appetizers. Excellent with cheeses
Serve at: 10-12°C
