Plantation Rums experience a double aging, the first in the Caribbean and the second in the Cognac region, in France. In the Caribbean, where the angels' share is high due to the tropical climate, a significant 7%, the rum ages in Bourbon barrels (American oak), which give strong notes of vanilla and coconut. After a few years in the Caribbean, the Plantation rum is taken to the Château de Bonbonnet, in France, where it ages in small Pierre Ferrand Cognac barrels (French oak) which bring delicate tannic hints. This last aging gives that elegance and finish that characterizes all Plantation rums. Rums distilled one part in pot still and one part in column still in Barbados, age for two years in the Caribbean and one year in France.
