approx. 4-5 months in steel with time on its own yeasts and with repeated batonnage to put the fine lees back into suspension.

The color is yellow with golden reflections. The aroma is intense and persistent. Clear sensations of fruit can be recognized on the nose, from green plum to "Mast'Antuono" pear (typical of Campania) up to strong balsamic sensations of mint. On the palate, the acidic shoulder and the marked minerality typical of the territory are immediately perceived.

Excellent with raw seafood, buffalo mozzarella, sea bass all'acqua pazza and baked red mullet.
